How easy would it be? I've rooted a few phones before so I have some experience, but I've never converted a phone from windows before.

It wasn't hard. If you can use command line to root phones with zips you've downloaded from the internet it then you've got all the skills necessary to put android on this phone. I just don't feel like relearning how to do all that stuff for the $35 i'll get after swappa fee and shipping. Check out this youtube video.
